Trancio’s fresh focaccia base starts its journey the day before cooking, using simply flour, salt, extra virgin olive oil, and water. The dough is left to prove for 24 hours to ensure great flavour and evenly distributed air bubbles, creating a pizza base that is softly crisp when baked and deliciously pillowy on the inside.
After the dough has proved, your pizza is baked with your choice of toppings, ready for you to collect. Your Trancio pizza is ready to eat at this point. If, however, you are going to serve your pizza later, or the following day, you can take it to the next level with a quick blast in a hot fan oven for between 5 and 8 minutes just before serving.
